I love overnight oats, they are so simple, healthy and as a mum of two, it is a brekkie I can make the night before. Win win!
Oats are so good for you, they are full of fibre, can help lower bad cholesterol, control blood pressure and keep you feeling fuller for longer. And that is just the benefits of the oats, not to mention the benefits of the nuts and seeds you can add to your overnight oats. So needless to say, overnight oats are a great healthy breakfast option that even kids love.

This is definitely one of my favourite breakfasts, and like most things is usually full of refined sugar and white bread, so I have done a healthy twist on this classic breakfast dish. You can get creative with your toppings or you can go the old favourites of strawberries and maple syrup like I have here. Enjoy! I love my bread maker and last week I put a bit of this and that into it to make my own version of a fruit loaf. Store bought fruit loaf is full of sugar and definitely isn't the ideal breakfast item, so I made a healthy version with no refined sugar what so ever.
Who doesn't love pancakes? Especially on a Sunday morning! This weekend I felt like pancakes and decided to try my own recipe to see what it would turn out like and they were delicious.
Pancake goodness with no guilt attached. Put your hand up if you love scrambled eggs? ME ME!! I whip this lunch up all the time and you can even have it for breakfast or dinner if you want something quick and easy. Use your leftover vegies with this recipe as well.
Now these scrambled eggs come with a healthy twist...of course! Serves: 1 INGREDIENTS 2 organic free range eggs 1tbs almond milk (or any milk of your liking) Cracked pepper Parmesan cheese, sprinkle Cherry tomatoes, halved Baby spinach Fresh basil leaves 1. Pop a fry pan on the stove on medium and allow it to heat up while you go onto the next step. 2. Crack the eggs into a bowl along with the almond milk, pepper and cheese. Whisk them together until combined. 3. Add the tomatoes, spinach and basil into the bowl and mix. 4. Pour the mixture into the frying pan. With a egg flip, keep mixing around the eggs until they become scrambled. Make sure they are cooked all the way through and your vegies are heated. 5. Serve with a slice of toast or on it's own, whichever you prefer. Serves: 4 INGREDIENTS 400ml can organic coconut cream 1/2 cup chia seeds 2tbs rice malt syrup 1tsp vanilla extract Toppings I used here: 6 strawberries, halved 1/4 cup of fresh blueberries Sprinkled Loving Earth Chocolate Buckinis 1. In a measuring jug, combine coconut milk, chia seeds, rice malt syrup and vanilla. Stir until combined, then refrigerate for 1 hour or overnight is best if you can. 2. In each glass, layer the pudding mixture, fruit and buckinis, and repeat. You will have a lovely looking parfait. Enjoy this for breakfast...it is refreshing and light plus it keeps you full until morning tea time. INGREDIENTS 2 pieces of bread (paleo, gluten free or wholegrain) 1/2 avocado 1 small tomato, diced Chia seeds Himalayan pink rock salt (the only salt I use) Freshly ground pepper 1. Toast your bread to your liking. 2. Spread the avocado generously onto each slice of toast. 3. Sprinkle with as much or as little chia seeds as you desire. 4. Top with the diced tomato and finish with a sprinkle of salt and pepper. 5. Enjoy any time of the day! You can really get creative with this meal by adding seeds or other nutritional goodies. If I wasn't pregnant I would also add some goats cheese or feta to give it some added depth. I made this for breakfast and enjoyed it with a (hard) poached egg.
