I love overnight oats, they are so simple, healthy and as a mum of two, it is a brekkie I can make the night before. Win win! Oats are so good for you, they are full of fibre, can help lower bad cholesterol, control blood pressure and keep you feeling fuller for longer. And that is just the benefits of the oats, not to mention the benefits of the nuts and seeds you can add to your overnight oats. So needless to say, overnight oats are a great healthy breakfast option that even kids love. Serves: 1 INGREDIENTS 1/2 cup rolled oats Sultanas, small handful (or however many you like) 1tbs vanilla protein powder (my new fave is Tropeka Lean Vanilla Protein) 1tbs sunflower seeds 1tbs linseed 1tbs pepitas 1/2 tbs chia seeds 1tsp cinnamon 2 drops vanilla extract 1 cup almond or coconut milk Honey and fresh blueberries to serve. 1. Put all the ingredients into a bowl (I like to use a Tupperware container to save on Glad Wrap waste), and mix until well combined. 2. Pop into the fridge and leave overnight to enjoy for breakfast the following morning.
