This afternoon I was craving chocolate milk, got to love pregnancy. But instead of reaching for cow's milk and a few tablespoons of Milo (a weakness of mine), I decided to get creative and make my own chocolate milk with a twist. I wasn't sure how it would turn out but it sure satisfied my craving, tasted delicious and left me feeling full. Plus all the ingredients are good for you and your body. Bonus!!
INGREDIENTS 250ml organic almond milk 2tbs organic vanilla or natural yoghurt 1 1/2tbs raw cacao powder 4 dates 2tbs avocado Sprinkle of cacao nibs to top You could also add banana and ice if you wanted too. 1. Easy peasy...pop all the ingredients into your smoothie maker and let it spin. 2. Pour into your favourite jar or glass and top with the cacao nibs. 3. Drink up and enjoy my healthy version of chocolate mylk. This brekkie is so delicious and full of goodness, plus you can experiment and add whatever takes your fancy at the time. When I eat this I feel as though I am having dessert for breakfast, so good!!
Serves: 4 INGREDIENTS 400ml can organic coconut cream 1/2 cup chia seeds 2tbs rice malt syrup 1tsp vanilla extract Toppings I used here: 6 strawberries, halved 1/4 cup of fresh blueberries Sprinkled Loving Earth Chocolate Buckinis 1. In a measuring jug, combine coconut milk, chia seeds, rice malt syrup and vanilla. Stir until combined, then refrigerate for 1 hour or overnight is best if you can. 2. In each glass, layer the pudding mixture, fruit and buckinis, and repeat. You will have a lovely looking parfait. Enjoy this for breakfast...it is refreshing and light plus it keeps you full until morning tea time. INGREDIENTS 2 pieces of bread (paleo, gluten free or wholegrain) 1/2 avocado 1 small tomato, diced Chia seeds Himalayan pink rock salt (the only salt I use) Freshly ground pepper 1. Toast your bread to your liking. 2. Spread the avocado generously onto each slice of toast. 3. Sprinkle with as much or as little chia seeds as you desire. 4. Top with the diced tomato and finish with a sprinkle of salt and pepper. 5. Enjoy any time of the day! You can really get creative with this meal by adding seeds or other nutritional goodies. If I wasn't pregnant I would also add some goats cheese or feta to give it some added depth. I made this for breakfast and enjoyed it with a (hard) poached egg. Be happy & healthy, Café bought banana bread is full of sugar and really not good for you at all. But why should you miss out when there are healthy and tasty versions out there which are easy to whip up at home, plus the kids will love it too.
INGREDIENTS 1 cup wholemeal plain flour 1/4 cup almond meal 1/4 cup rice malt syrup 1/4tsp salt 3/4tsp baking soda 1 egg 1/3 cup plain yoghurt (I love Jalna Natural Greek Yoghurt) 1tbs milk 2 ripe bananas, mashed 1/2tsp vanilla extract 1/2tsp cinnamon 1/2 cup fresh or frozen raspberries 1. Preheat oven to 180o (350oF). 2. Lightly grease a loaf tin (line with baking paper if need be). 3. Whisk together the flour, almond meal, salt and baking soda and then set aside. 4. In a separate bowl, beat together the egg, yoghurt, milk, raspberries and mashed bananas until combined. 5. Add in the vanilla extract, rice malt syrup and cinnamon. 6. Slowly add the flour mixture and mix with a wooden spoon until well combined. 7. Pour the batter into the loaf tin and spread out. 9. Pop the tin into the oven and bake for 45-50mins or until golden and a skewer comes out clean. 10. Leave to cool down and then pop onto a cooling wrack. 11. Cut into slices and enjoy! To keep mine fresh, I wrapped individual slices in cling wrap, popped them into a container and then in the freezer. I now have a sweet healthy snack ready for me to eat and it will last a while as it is in the freezer.
