One of my childhood favourites! They were always at parties or cake stalls at Primary School. They are crunchy and crackly, but also when I looked at the ingredients to make some for Ava, there was 1 1/2 cups of sugar in them. WTF??!! What child needs that much sugar? Obviously they aren't going to eat the whole batch, but geez! So in true Kylie recipe creating fashion, I turned the humble chocolate crackle into a much more healthier version that doesn't compromise on taste. Makes: 10 (approx) INGREDIENTS 4 cups organic puffed rice (from your health food store or health food section in your supermarket) 2-3tbs rice malt syrup/honey/maple syrup (whatever sweetness tickles your fancy) 1/2 cup desiccated coconut or flaked coconut 3tbs cacao powder, heaped spoons 4tbs coconut oil 1. Place the rice malt syrup (or whatever sweetness you are using) into a microwave proof bowl or mug, along with the coconut oil. Place in the microwave and melt together. 2. Put all the dry ingredients into a bowl, and add the melted syrup and oil. Mix until well combined. 3. Place patty pans onto a tray, and scoop the mixture into the pans. 4. Place in the fridge to set for at least one hour, then enjoy! Super simple and really tasty. If you use honey, you get a chocolate crackle crossed with a honey joy (oh yeah!). ++ Want to know more ways I can help you live your healthiest life?
