We usually associate an omelette with savoury. Having it with a slice of toast and put some cheese and veggies in the mix. But I am a sweet tooth, so when I saw a sweet omelette recipe, I was intrigued to try it out. It is surprisingly delicious and well worth the little extra effort. I have tweaked the recipe to make it my own. Serves: 1
Free from: dairy, refined sugar, gluten INGREDIENTS Omelette ingredients: 2 eggs 1tbs almond meal 1tbs plant based milk (I used almond milk) 1tbs yoghurt (natural Greek or coconut) 1tsp desiccated coconut 1/4 cup blueberries 1tbs maple syrup 1/2tsp cinnamon To serve ingredients (I just sprinkled them around): Dollop of yoghurt Extra blueberries Desiccated coconut Sunflower seeds Linseeds 1. Put all the omelette ingredients into a bowl and whisk until combined. 2. Heat coconut oil in a fry pan on med-low heat, then pour in the omelette batter. 3. Cook until brown and then flip it over or halve it in the fry pan first and then flip. 4. Once the egg has cooked through it is ready to plate. Top with desired toppings.
