Put your hand up if you love a good muffin? Me!!!! But did you know the muffins you buy in your typical cafe are FULL of refined sugar? Not cool. The other morning I decided to put together my own little creation which is refine sugar free and dairy free for some friends that were coming over for brunch, they were a hit! INGREDIENTS 2 cups plain wholemeal flour 1 cup LSA mix 2tsp baking soda 3 eggs, lightly beaten 1/2 cup coconut oil, melted 1/2 cup coconut or almond milk 1tsp cinnamon powder 1tsp vanilla extract 1/3 cup maple syrup or rice malt syrup 1 cup desiccated coconut 2 cups frozen berries Flaked coconut for the top 1. Preheat the oven to 180 degrees and line a 12 hole muffin tray with baking paper or patty pans. 2. Combine the flour, LSA and baking soda in a large bowl. Add the eggs, coconut oil, milk, cinnamon, vanilla, maple syrup and mix thoroughly. Then add in the desiccated coconut and berries. 3. Spoon the mixture into the muffin tin. Then top with a few coconut flakes. 4. Bake for 25 - 30 minutes or until a skewer comes out clean. Allow to cool for 5 minutes and the enjoy warm or cold. ** Place into an air tight container and pop them in the fridge to keep for a few days.
