We usually associate an omelette with savoury. Having it with a slice of toast and put some cheese and veggies in the mix. But I am a sweet tooth, so when I saw a sweet omelette recipe, I was intrigued to try it out.
It is surprisingly delicious and well worth the little extra effort.

A tip that I came across was to make sure your probiotic capsule only has 'probiotics' in it and not "prebiotics' as the pre can make the coconut milk go mouldy which isn't what we want. We want it to ferment with good bacteria.
